3 cups peeled and sliced Apples (from about 3 apples)
3 cups peeled and sliced Pears (from about 3 pears)
⅓ cup Sugar
5 tablespoons Water
1 tablespoon Lemon juice
1 tablespoon Cornstarch
½-1 teaspoon Cinnamon, to taste
¼-⅓ cup chopped Candied ginger, to taste
½ cup Flour
½ cup Brown sugar
¼ cup Butter
1 teaspoon Cinnamon
Preheat oven to 375°F
For the filling:
Put the sliced apples and pears in a large pot with sugar, 3 tablespoons of water, and the lemon juice. Bring to a boil and reduce the heat. Simmer for 5 minutes, stirring occasionally, until the fruit is just tender. Add as much cinnamon as you like and keep tasting until it’s perfect! Combine 2 tablespoons of cold water with the cornstarch and add to the fruit. Cook the mixture until thickened and bubbly. Take off the heat and stir in the candied ginger.
Pour the fruit mixture into a square 9″ by 9″ baking pan, or similar sized ceramic baker.
For the topping:
Combine the flour, brown sugar, butter, and cinnamon with your fingertips. Work this mixture until it resembles coarse crumbs. Sprinkle the topping over the fruit.
Bake until browned and bubbly, about 25 minutes.
