1/2 cup Greek yogurt
1 apple, cored and roughly chopped (reserving some for garnish)
1 ripe banana
2 tablespoons honey, optional
1 tablespoon vanilla bean paste
1 teaspoon cinnamon
1/8 teaspoon fine sea salt
2 sprigs thyme, de-stemmed (reserving some for garnish)
1 cup apple cider or juice, frozen into cubes
2 cups regular ice cubes
Fill the Vitamix with all the ingredients and pop on the lid. Remove the lid center and place the tamper in the top. Starting on low, begin blending, using the tamper to push the ingredients towards the blades. Continue blending, turning the speed up slowly as you go and tamping the ingredients down until the mixture comes together – go all the way to 10 and then to high. This should take about 30 seconds. As soon as the ingredients start turning over smoothly together, turn the machine down and then off. Give it a quick taste and add more cinnamon, vanilla bean paste or anything else you think it needs. Quickly blend in any adjustments, scoop into dishes and eat!
Fun Variations: Add a dash of pumpkin puree, or try a little instant espresso powder and orange zest. Yum!
