Black Bean Salad

Hipcooks Black Bean Salad

serves 6

2 cups black beans, soaked overnight and cooked in salty water until al dente
1 avocado, diced
2 large tomatoes, seeded and diced
1 small red onion, diced
1 cup cooked corn (fore-roasted corn from the frozen aisle is delicious!)
3 cloves garlic, finely chopped
1 handful cilantro, chopped
3 limes, juice of
4 -6 tablespoons extra-virgin olive oil
1 serrano, chopped, optional
Maldon salt, to finish

 

Combine all ingredients and season to your liking with lime juice and salt. If you like a little bit of a kick, add a chopped chili for heat.
