Brazilian Cheese Puffs

Pao de Queijo are wonderful little poofy mini-muffins that are wonderful alongside soups and salads, or just pop them in your mouth!

1 cup milk (you can subsitute with almond or any other type of milk)
3 eggs
3/4 cup oil (grapeseed or coconut)
1 tablespoon salt
3 cups tapioca starch
2 cups grated cheese (use parmesan, gruyere or quatro formaggio)

Set oven to 400F.

Place milk, eggs, oil and salt in a blender and blend well. Add the tapioca starch one cup at a time, blending well after each addition. Now, add the cheese and by hand mix in.

Pour into mini muffin tins and bake for 20 minutes, or until golden.
