4 cups vanilla wafers
3/4 cup pecans (or walnuts or any nut/seed you like)
½ cup cocoa
1 cup powdered sugar
2/3 cup bourbon (or whiskey or rum)
2 tablespoons vanilla bean paste (or honey)
zest of one orange
pinch of salt
This recipe is from Tristan, the rockin’ manager of the Portland studio. She loves them…and you will too! Maybe? They are easy, no-bake AND, since the alcohol isn’t cooked away, you can even get a wee buzz after eating several!
In a Cuisinart, or large mortar and pestle, blend together the wafer, pecans, cocoa powder and powdered sugar. While blender is on, drizzle in bourbon and vanilla bean paste. Blend until combined, add zest and salt. Make into small bite-size balls and roll in powdered sugar, place on cookie sheet and chill for several hours.
