makes 16 brownies
8 ounces dark chocolate, chopped
3 ounces unsalted butter
1 cup sugar
1 tablespoon vanilla bean paste
A pinch of sea salt
1 cup flour
1 cup stout beer
Maldon salt to top the brownies
A handful of nuts or dried cherries, if desired
Olive oil spray
Preheat oven to 350°F
Melt the chocolate and the butter in a bowl, over a pot of hot water. Whisk the eggs and the sugar together and then add vanilla bean paste. Pour the chocolate mixture into the eggs and combine.
Combine the flour and the salt in a separate bowl. Add ⅓ of the flour to the eggs and mix until just combine. Pour in half of the beer and combine. Then add in another ⅓ of the flour and combine again. Add the rest of the beer and combine, followed by the rest of the flour. Stir in any nuts or dried fruit you’d like and pour batter into a square baking dish sprayed with olive oil. Sprinkle Maldon salt over the top and bake for 25 – 30 minutes.
