Curried Carrot Soup

2 tablespoons butter, melted
1 tablespoon olive oil
2 cups chopped onion
1 cup chopped celery
3 cups chopped carrots
Curry powder
4 cups chicken stock
Creme fraiche
Black salt

 

Melt butter and olive oil in a soup pot. Add onions, celery and carrots. Add salt and curry powder to taste (you can always add more later). Sweat, covered, for about 7 minutes.

Add chicken stock and simmer until carrots are soft. Blend, return to pot and add more broth, if needed.  Taste and adjust salt and curry powder, if desired.

Garnish with creme fraiche and black lava salt. To make the spider’s web, add the creme fraiche in concentric circles. With a knife, draw a radius from the center of the circles out to the edges. Repeat. For the spider – use a dash of black salt!

Trick: Serve it at your Halloween in little shot glasses, like we do!
