How about a hangover-helper? After an evening’s celebration, wake to this beautiful and rejuvenating smoothie. Of course you can keep the party going by spiking it with vodka, too! This recipe makes enough for 2 large smoothies.
6 ounces yogurt (use plain, vanilla, fruit yogurt – or kiefir for extra points!)
3/4 cup cranberry juice, chilled
1/2 cup (24 g) cranberries, frozen
1 small beet, peeled & cut into chunks
1/3 cup frozen raspberries
2 teaspoons vanilla bean paste
honey, if desired, for extra sweetness
small handful ice cubes
freshly grated cinnamon or nutmeg to garnish, optional
dash vodka (if you need a little hair of the dog)
Fill a Vitamix with all of the ingredients except the spices and pop on the lid. Starting on low, begin blending, turning up the volume slowly, and take it all the way through to high. Blend for a minute, or until it’s the perfect consistency. Taste. Is it sweet enough? Add a dash of vanilla bean paste or good local honey. Serve at once with a fresh grating of nutmeg or cinnamon on top and enjoy a sweet morning!
