Minted Pea Crostini

Serves 8

1 package frozen organic peas, defrosted
¼ red onion
1 clove garlic
4 tablespoons extra virgin olive oil
small handful mint leaves
1 lemon
1 baguette, sliced and toasted
Pecorino cheese, to garnish (optional)

 

In a food processor, add the peas, red onion, garlic, extra virgin olive oil and mint leaves. Season with the juice of up to one lemon, salt and pepper.  Pretend you are in Tuscany, and serve on toasted baguette, shavings of fresh pecorino cheese on top, and a crispy glass of Pinot Grigio.

    I made this to bring to a St Patrick’s day party. The green color was great & so was the taste. We even used leftovers on sandwiches.

    Congrats! Leftovers also make a great chilled soup, thinned out with a bit of water. Cheers, Monika
