Rosemary Pomegranate Gin Fizz

makes 1 cocktail

juice of one lemon (approx. ½ oz.)
½ oz. rosemary simple syrup (recipe below)
½ oz. pomegranate juice
1½ oz. gin
soda water, optional, to top up the glass

 

Pop the ingredients into a cocktail shaker (we love the Boston-style shakers) with plenty of ice, and shake it ’til you make it. Strain and serve into a glass full of ice. If you like, add a splash of soda water (to taste). Garnish with fresh pomegranate seeds and/or a sprig of rosemary.

Rosemary Simple Syrup
Combine 1 cup of sugar and 1 cup of water in a saucepan with a couple of sprigs of fresh rosemary. Bring to a boil, then simmer over low heat for 5 minutes. Remove from heat and when cool, strain the syrup. It can be stored, chilled, for up to 2 weeks.
