Tamarind Whiskey Sour

Serves 6

¼ cup tamarind paste (Tamicon brand is nice if you can find it)
9 ounces bourbon whiskey (middle shelf is perfect)
2 limes, one cut into wedges and the other sliced
6 sprigs of mint
1 cup sugar, plus extra for the rim of the glass
Lots of ice


To make tamarind simple syrup, combine ¼ cup tamarind paste, 1 cup sugar, 1.5 cups scalding water. Mix to dissolve tamarind and sugar and chill.

When ready to make cocktails, sugar-coat the rims of the glasses using the lime wedges to wet the rim. Fill the glasses with lots of ice. Fill a small pitcher with ice, mint, 6 ounces tamarind simple syrup, and bourbon. Mix very well, making sure to bruise the mint. Strain the cocktail into the glasses filled with fresh ice.

Garnish with lime wheels.
