Here in Portland, I’m hoping for sun. I need a little brightness in my life this week. I know the Aperol Spritz will deliver, regardless of what life throws my way. That’s for certain.

Here’s what to grab for class:
Campari or Aperol
Vermouth, if possible
Prosecco, Wine, or Bubbly Water
Orange (or Lemon)
If you do not have Campari or Aperol, how about an Amaro? Lillet? Anything bitter? We’ll discuss the many substitutions in class.

Aperol spritz and Negroni Sbagliato
With these ingredients, you have many options! Rather than dictate exact proportions, I prefer to have a guide. With a cocktail this easy and sunny, you can’t go wrong!
The idea is not to complicate or be too rigid. When you experiment, especially with a cocktail that is light and low-alcohol, you can adjust to your liking quite easily.
Technically, an Aperol Spritz is Prosecco, Aperol, and soda water. Light and refreshing. Try it, and then play outside the box! If the cocktail is a little sweet for you (like it is for me), try mixing it up with the guide below.
A Negroni is Campari, gin, and red vermouth. A negroni sbagliato (or a “wrong” negroni) omits the gin and uses white vermouth. And yet, there are many yummy ways to make it wrong: experiment!
Something Bitter: Campari, Aperol. Enhance with bitters, or other bitter boozes, like Amaro, Cynar, Suze, Fernet…so many options!
Something Bubbly: This can be “sweet” bubbles, like Prosecco or sparkling wine. Or you can use a combo of regular wine or vermouth, and a splash of sparkling water. Tonic water or sparkling lemonade? Pelligrino? Go for it!
Something Orange: a dash of orange peel goes a long way in this cocktail, and it looks beautiful. In the video, I show you how to make a “coin,” a peeled twist, a bartender-style twist and a beautiful curled twist. These are all wonderful skills for your arsenal.

Ingredients
For an Aperol Spritz:
3 ounces Prosecco or sparkling wine
2 ounces Aperol or Campari
1 ounce bubbly water
a twist of orange rindFor a Negroni Sbagliato:
1 ounce Aperol or Campari
1 ounce white vermouth
1 ounce Processo or sparkling wine
a twist of orange rindInstructions
For either cocktail, stir the ingredients together into an ice-filled glass.
