Creepy Cocktail & Spooky Soup Virtual Class
Get ready for class:
Prep:
You may have pre-purchased Mirepoix (equal amounts of chopped onion, carrots, and celery.) If you don’t you’ll need to get chopping before class! Check out our post on the Magic of Mirepoix for a comprehensive how-to.
How much mirepoix you’ll need depends on how much soup you’d like to make. About 2 cups of mirepoix will be plenty for 2 people. For a nice and large pot of soup, chop about
1½ pounds carrots
1 large onion
5 celery stalks
Other ingredients to get ready/have nearby:
olive oil and/or butter
salt & pepper
1 quart of chicken stock or water: please place on the heat to simmer before class
about ½ cup of sour cream, crème fraîche or plant-based sour cream: please spoon it into a squeezy bottle before class (there was one provided with your kit)
1 cup of sugar: please place it inside a small pot
Tequila or Mescal
cherry or other bitters
All your kit items:
lychees in syrup
Amarena cherries in syrup
dried hibiscus flowers
rosemary
limes
blueberry salt
black salt
Ready your equipment. You’ll need:
a Chef’s knife and cutting board
a large soup pot and sturdy cooking spoon
a Blender
Cocktail shaker with muddler & strainer (or a makeshift shaker, like a mason jar with a lid and mesh strainer)
Measuring cup or cocktail jigger with ounces
Ice

Kit content leakage and Bonus Recipe
Jen has told me that she’s so terribly sorry that some of the shipped kits had syrup leakage. She’s mortified. If you’re one of those customers who has experienced leakages, please don’t worry: I’ll create 2 cocktails in class so that everyone can enjoy a spooky cocktail. We’ll make Hibiscus Margaritas in class and for those that have syrup, we’ll make a bonus cocktail: a Blood-red Cherry Margarita.
