Celebrate the bounty of the season with A Harvest Dinner. This menu features the best of wintery flavors rolled into a beautiful meal. We’ll prepare a Rosemary, Fennel & Garlic Encrusted Pork Tenderloin with Herbed Pan Jus and Bacon and Balsamic Brussels sprouts. For dessert, we’ll whip up an Apple & Pear Crisp scented with Candied Ginger.
Ingredients for Harvest Dinner
Here’s what you’ll need for a beautiful meal to serve 4, with leftovers!
1 medium onion
1 head of garlic
3 apples (get an extra if they’re small)
3 pears (get an extra if they’re small)
1 pound Brussels sprouts
herbs: a couple sprigs of thyme, a few sage leaves, and 6 sprigs of rosemary
1 cup almond flour
flaked almonds (you’ll need about ½ cup)
candied ginger – about a handful
pork tenderloin – look for 1 nice loin that weighs approximately 2 pounds. If it has some marbled fat on the side, it’s a bonus!
12 ounces bacon
spices: bay leaf, fennel seed, coriander seed, cinnamon, allspice
staples: dry vermouth or white wine for cooking, balsamic vinegar (white balsamic is perfect!), chicken stock, sugar, brown sugar, cornstarch, olive oil, butter (you’ll need 1 stick) salt and pepper
