Ya Mahn! it’s the Caribbean Sip & Nibble! Let’s hop to the West Indies for the inspa-ray-shun for this Virtual Shakedown and Cooking Class. Summer beckons a rum cocktail on occasion, don’t ya think? This one has the sweet/sour from hibiscus, the punch from ginger, and the refresh from lime. Ahhhhh! During class, we’ll also prepare a full-of-flavor, full-of-color black bean salad. A fabulous summer salad. Backyard picnic, here we come! Just crank the tunes and you can be “virtually” on the beach in Jamaica!
Here’s what to have on hand to get ready for Class:
For the cocktail:
Hibiscus tea bags (or dried hibiscus blossoms, if that is something you have)
1 nub ginger
1 cup sugar
cocktail shaker with muddler and strainer (or a makeshift shaker, like a mason jar with a lid and mesh strainer)
For the salad:
2 cups cooked black beans
2 large tomatoes
1 red onion
1 cup cooked corn (just defrost some fire-roasted corn from TJs, or cut it from a cooked ear of corn)
a handful cilantro
1 serrano, chopped, optional
Staples: olive oil, garlic, salt
