Chicken Cabbage Dumplings with Sweet Chile Dipping Sauce

Ingredients

Here’s what to have on hand to get ready for class. The amount below makes 10-12 dumplings (perfect for 2 people, or wonderful for your Dim Sum table for a family of 4.)

10 to 12 Napa cabbage leaves
1 pound boneless skinless chicken thigh, trimmed of excess fat
2 cloves peeled garlic
a thumb-sized piece of ginger, peeled
1 fresh chile (like red or green jalapeno, serrano, or a couple of red Thai chilies
½ cup water chestnuts
4 scallions
1 small bunch of cilantro
1 lime
fish sauce
sesame oil
soy sauce
sweet chile sauce

 (If you wish to make a vegetarian version, you’ll need about 12 oz of fresh shiitakes in place of the chicken. Prior to class, remove and discard the mushroom stems. Cut mushrooms into small cubes. Saute them lightly in a little bit of grapeseed oil (or sesame oil for extra flavor!). Let cool and have on the ready for class.

Food processor (if you don’t have a food processor, you can join the class and chop everything by hand. Purchase ground chicken instead of the thighs.)
