Chicken Cabbage Dumplings with Sweet Chili Dipping Sauce

Instead of a traditional wonton wrapper, these Chicken Cabbage Dumplings with Sweet Chili Dipping Sauce are enrobed in tender cabbage leaves, which give them added flavor, texture, and health. The chicken filling is bursting with flavor from fish sauce, texture from water chestnuts, and brightness from lime. Unexpected, indeed! In class, we’ll also make a sweet chili dipping sauce from scratch. This class is gluten-free and dairy-free (have a “hey, whaddya know!” moment.) It can also be modified for vegetarians.
Ingredients and Equipment
Here’s what to have on hand to get ready for class. The amount will make enough dumplings to fill your bellies and to share with your admiring family.
10-12 Napa cabbage leaves
1 pound boneless skinless chicken thigh, trimmed of excess fat (purchase ground chicken if you do not have a food processor)*
2 cloves peeled garlic
a thumb-sized piece of ginger
½ cup water chestnuts
4 scallions
1 bunch of cilantro
1 lime
fish sauce (or salt if you’re scared of fish sauce— but we will try to convert you!)
sesame oil
soy sauce
sweet chili sauce (it’s bright red with flecks of chili and has a spicy, sweet, and vinegary taste. Many stores carry it, Trader Joe’s has a nice one)
grapeseed or other neutral oil
fresh chili (red or green jalapeno, serrano, or Thai chilies)
* If you wish to make a vegetarian version, you’ll need about 16 ounces of fresh shiitake mushrooms in place of the chicken. Prior to class, remove and discard the mushroom stems. Cut mushrooms into small cubes. Saute them until they’re just soft in a bit of grapeseed oil (or butter). Let them cool to room temperature before class.
