Chocolate Gingerbread Cookies
Homemade Eggnog (enjoy with or without the alcohol)
Ingredients for Holiday Elves
These ingredients will yield 30 – 45 cookies, depending on the size you choose. As for the eggnog: the ingredients we list will make 6 servings of eggnog. It will keep for over a month in the fridge (if you have booze in it) — plenty of time to drink or to give as a gift! If you prefer to cut the eggnog amount in half, we’ve starred the ingredients to halve.
have these pre-measured before class:
2 cups flour
⅓ cup unsweetened cocoa powder
1 cup packed brown sugar
¼ cup molasses
2 teaspoons baking soda
1 teaspoon sea salt
¾ cup (1½ sticks) room-temperature butter
5 tablespoons ground ginger
cinnamon & nutmeg
8 ounces dark chocolate (or 1 heaping cup of dark chocolate chips)
7 eggs: 1 for the cookies and 6 for the eggnog*
2 cups (1 pint) heavy cream or whipping cream*
1½ cups milk*
vanilla bean paste or vanilla extract
If you’d like to add alcohol to your eggnog, you’ll need about 1 cup. Cognac, brandy, bourbon, or rum are all options!*
measuring spoons and cups
2 mixing bowls, spoons, and a spatula for stirring
electric hand beaters or a stand mixer
medium-sized heavy-bottomed pot (for the eggnog)
a pint glass or wide-bottomed glass
2 baking sheets lined with parchment paper or an Exopat
a cooling rack — but only if you have one (not necessary, just nice to have)
