Let’s make pasta from scratch: no special equipment necessary! Hipcooks teacher Joe is sharing his mother’s special recipe for homemade, melt-in-the-mouth Cavatelli. With just 1 egg, flour, and ricotta — you’ll have a new dinnertime faily favorite.
While the cavatelli dough rests, we will teach you through two options for sauces — so you can get cavatelli making and cavatelli eating, for a delicious family dinner.
Homemade Cavatelli: Just a few ingredients make the magic!
Here’s what to have on hand to get ready for Homemade Cavatelli. This will make 4 servings:
For the Pasta Dough:
15 ounces (1 tub) ricotta
2 cups flour, plus plenty of additional flour for rolling/shaping*
1 egg
*for a gluten-free version, use gluten-free all-purpose flour in place of regular flour. (King Arthur and Bob’s Red Mill both carry nice gluten-free flours.)
Equipment:
bowl and a large spoon
large pot with salted water – brought to a boil before class, turned off and lidded
wooden spoon (if you have one)
a cheese grater and/or Microplane
If you’d like to make a Tomato confit you’ll need:
2-3 tomatoes
1 clove of garlic
olive oil and/or butter
salt and pepper
herbs, like parsley or basil — fresh or dried
parmesan, romano, or pecorino cheese
If you’d like a Lemon, pea & mint sauce you’ll need:
a lemon (with a grater and squeezer nearby)
a handful of mint
a handful of frozen peas
butter
parmesan, romano, or pecorino cheese
