Kid’s Club: Dim Sum Dumplings!

Calling all Kiddos for another Chinese New Year Class: Kid’s Club: Dim Sum Dumplings! Did you know eating dumplings in the New Year is good luck? Bring It!
In this class we’ll make not one but TWO types of dumplings (using the same filling), so you can decide which method you like best. What fun!
Kiddos, you will need to be at the stove for part of this class, so if you or your adult is not quite comfortable with that, make sure they’re around to help you for the last 15 minutes of class: the part where we get cooking.
Here’s what to have on hand to get ready for Kid’s Club: Dim Sum Dumplings. The amount will make enough dumplings to fill your bellies AND to share with your admiring family.
Have your parents help you get these things ready before class:
8 Napa cabbage leaves
8-10 round dumpling wrappers
1 pound ground chicken*
2 cloves peeled garlic
a thumb-sized piece of ginger, peeled
½ cup water chestnuts
1 small bunch of cilantro
fish sauce (or salt if you’re scared of fish sauce…but don’t be a scaredy-pants: it’s awesome!)
sweet chile sauce
grapeseed or other neutral oil
* If you wish to make a vegetarian version, you’ll need about 12 ounces of fresh shiitakes in place of the chicken. Prior to class, remove and discard the mushroom stems. Cut mushrooms into small cubes. Saute them until they’re just soft in a little bit of grapeseed oil (or butter). Let them cool to room temperature before class.
