Calling all Kiddos on St Paddy’s Day! Kid’s Club: Kale Chips and Cordials — this one’s for YOU! And your parents, because we know just how delighted they’ll be when you have a new obsession: a Kale Chip Addiction! Bring it, you suspicious nay-sayers: we’re gonna have you jumping up and down like happy leprechauns when you flip over these chips!
While our Kale Chips bake, we’ll make a delightful little drink: a Mint and Lime Cordial. How simply sophisticated!
Kiddos, you will need to be at the stove for part of this class as well as use the oven, so if you or your adult is not quite comfortable with that, make sure they’re around to help you.
Kid’s Club: Kale Chips and Cordials: Just a few ingredients make the magic!
1 large bunch kale (curly kale is lovely, or grab 2 bunches of lacinato kale)
olive oil and salt
a mint tea bag (fresh mint or even a sprig of fresh thyme are great substitutes)
some sugar, coconut sugar, brown sugar or agave
Line a baking sheet with an Exopat or parchment paper for your kiddo. Preheat your oven to 350℉. Make sure there is a rack in the middle of the oven.
A large colander and bowl, and a salad spinner if you have one
A sieve or small strainer
Towels, paper towels, and oven mitts
