Calling all kiddos! ¡Arriba, Arriba, Ándale! Join Hipcooks and Kid’s Club: Mexico and enjoy Albondigas Soup. It packs so much flavor into one bowl.
Kiddos: you will need to be at the stove for most of this class, as well as do a bit of knifework. If you or your adult is not quite comfortable with that, make sure they’re around to help you.
Ingredients for Let’s go to Mexico!
This will make a large pot of soup: perfect for eating, sharing, or freezing leftovers.
1 pound ground beef
½ cup cooked white rice (plain, basmati, or jasmine rice). Parents: a perfect excuse to prepare rice this week. Set some aside as “leftovers.”
Mirepoix: you’ll need about 2 cups. Places like Trader Joe’s sells pre-chopped Mirepoix in containers: this is perfect!
Peppers: you’ll need 3 bell peppers (they can be all 1 color, or for beauty points: 1 yellow, 1 orange, and 1 red or green. Mini peppers from a pack of multicolored mini-peppers is also a nice choice!)
3 peeled garlic cloves
a 14-ounce can of chopped tomatoes, opened and drained over a colander
1-quart chicken stock
a lemon or lime
1 bunch cilantro
salt and pepper
Optional add-ons: Worcestershire sauce, Tabasco or hot sauce, dried oregano or thyme, chili or cayenne pepper
An awesome soup pot (our favorite is the Le Creuset 4.5 quart soup pot)
a sturdy heat-proof cooking spoon
Microplane or grater
a cutting board and chef’s knife
trivet or a hot-pad and oven mitts
kitchen towels for wiping surfaces, drying towel
soup bowls for serving
