Calling all Kiddos! We’ve got a perfect class for you: Kid’s Club: Spring Rolls and Peanut Sauce. These delicious rolls satisfy an afterschool snack-attack and are just as healthy as they are delicious. In class, we’ll make a peanut sauce to match. You can use this as a dip for your rolls, or skip the rolls altogether and make a peanut-sauce dressed Asian noodle salad.
Kiddos, you will need to be at the stove for part of this class, so if you or your adult is not quite comfortable with that, make sure they’re around to help you. Also, we’re using the Blender in class: adults please make sure the child knows how to operate the blender, or be available for help.
Kid’s Club: Spring Rolls and Peanut Sauce: ingredients to make the magic!
Here’s what to have on hand to get ready for class. This will make 4 servings:
1 cup shredded carrots (buy these pre-shredded at Trader Joe’s)
a Persian cucumber, sliced into thin coins
1 bunch basil and/or mint
a 1-inch piece of ginger. Adults, please peel and roughly chop before class.
2 garlic cloves. Adults, please peel and roughly chop before class.
grapeseed or other neutral oil
½ cup peanut butter
small amount brown sugar
fish sauce, or salt
a pack of spring roll wrappers (we love the small-size ones here on Amazon, but you should be able to find these at any Asian market or large grocery store)
2-ounce bundle dried bean thread noodles (here on Amazon, but you should be able to find these at any Asian market or large grocery store)
two 10 to 12-inch skillets
a kettle full of boiling water
small heat-safe glass or metal bowl
a large mixing bowl and tongs
citrus press or reamer
