Bloody Marys & Brunch (Class only)

Hey, Hipcooks: Let’s do Brunch! How about a Brunch Virtual Cooking and Cocktailing Class to get us all happy and start the day like champs?
This class will feature a Hipcooks Bloody Mary/Bloody Caesar. We’ll include a lesson on how to make a quick pickle because this cocktail calls for the perfect pickled-veggie garnish, don’t you agree? We’ll also prepare a Homemade Spicy Tomato Mix: teetotalers, gin lovers, and vodka fans can have a beverage that is juuust right.
For eating, we’ll prepare a Stuffed Potato Pancake. It is fluffy, airy, and oh-so-delicious. A large pancake will feed up to four people. It’s the perfect intersection of fancy-meets-easy. All you need to do is choose your stuffing. Go vegetarian, choose ham and cheese, or smoked salmon, lemon, and chive (as in the photo below).
Ingredients for Let’s do Brunch:
Get your pancake supplies ready:
butter (about half a stick)
7 eggs
⅓ cup milk (substitute non-dairy milk if you’d like)
flour (or substitute gluten-free flour)
crème fraîche or sour cream (a small 7.5-ounce tub is plenty)
2 cups leftover mashed potatoes (this is very easy if you prepare mashed potatoes the night before and reserve 2 cups as leftovers, Alternatively, peel 2 Russett potatoes, cut into cubes and boil in salted water until soft. Drain, cool, and mash them up.)
2 lemons
stuffing for your pancake. Options are smoked salmon (about 2-4 ounces worth), or use Proscuitto, ham, your favorite cheese, spinach, or whatever else you dream of!)
garnish options: chive, crème fraîche or sour cream, and/or caviar if you’re fancy (we are!)
Get your pickle supplies ready (This is for the garnish for the cocktail):
vinegar (you’ll need about a cup. Rice wine vinegar works well)
a small amount of sugar and salt
choose your veggies for pickling, options are carrots, daikon, asparagus, okra, jalapeno, and/or serrano pepper.
Cocktail ingredients (We’ll teach you to make your Bloody, your way!):
gin or vodka
fresh tomatoes, tomato juice, V8, or Trader Joe’s Garden Patch
Your choice of:
salty: Worcestershire sauce, soy sauce, clam juice, and/or fish sauce
spicy: Cayenne, hot sauce, and/or horseradish
acid: lemon, lime, pickle juice, and/or olive brine
Equipment List:
small pot
jar and lid
slotted spoon or tongs
mixing bowl and whisk
10-inch non-stick skillet and spatula
cutting board & knife
cocktail shaker & strainer (a mason jar with a lid and mesh strainer works nicely), and ice
