Opa, Hipcooks! Let’s Go to Greece and make Spanikopita and Tzatziki. While the Greek Isles may be many thousands of miles away, we can dream big as we bite into deliciousness. At Hipcooks, we’ll have an Ouzo cocktail by our side!
Ingredients for Let’s Go to Greece
a pack of phyllo dough, defrosted
1 package (12 ounces or so) frozen chopped spinach, defrosted
1 cup plain Greek yogurt
small block parmesan cheese
½ cup feta cheese
½ cup pine nuts
1 English cucumber, or 3 small Persian cucumbers
a handful of fresh herbs: dill, mint, parsley or a combination
3 cloves garlic
½ a stick (4 tablespoons) butter
nutmeg, salt and pepper
Microplane or fine grater
chef’s knife & cutting board
mixing bowl and large sieve or colander
a cheese grater or box grater, over a bowl
citrus squeezer or reamer
baking sheet, lined with parchment paper or Exopat
preheat your oven to 400℉
