¡Arriba, Arriba, Ándale! Join Hipcooks and Let’s go to Mexico and enjoy Albondigas Soup. It’s perfect for Cinco de Mayo. This classic Mexican meatball soup packs so much flavor into one bowl.
Ingredients for Let’s go to Mexico!
Our Ingredients Kit makes it easy — just about everything you need for class arrives in a lovingly packed box. The purchase price of the ingredients kit includes the kit (4 servings), shipping costs, and the cost of the class. (If you cannot attend the live class, we’ll send you a recording to watch at your convenience.)
This will make a large pot of soup: perfect for eating, sharing, or freezing leftovers.
Mirepoix: consisting of 1 onion, 3 celery stalks, 3 carrots and 4 garlic cloves. Please dice the onion, garlic and celery, and slice the carrots into rounds before class. Here’s info!
Peppers: you’ll need 2 bell peppers (1 yellow and 1 orange make for the prettiest combo, but any will work.) Also, you’ll need a chile pepper: a pasilla or poblano is perfect! If you don’t like any spice, use a green bell pepper.
white wine: some for you, some for the soup!
a 14-ounce can of chopped tomatoes, opened and drained over a colander
1-quart chicken stock or Better than Bullion
1 pound ground beef
¼ cup white rice (plain, basmati, or jasmine rice)
1 bunch cilantro
a lime or lemon
staples: olive oil, salt and pepper, Worcestershire sauce, Tabasco or hot sauce, dried oregano or thyme, chili or cayenne pepper
extra bonus points: fresh or dried epazote (an herb found in most Latin markets)
