From our series that matches a delicious cocktail with its perfectly paired bite to eat, we bring you Let’s Go to Thailand: Sip & Nibble. Sip on a Tamarind Whiskey Sour while you enjoy delightful fresh Spring Rolls. You’ll get a bounce to your shoulders and a spring in your step in no time!
Ingredients for Let’s Go to Thailand: Sip & Nibble
tamarind concentrate (we love Tamicon brand, and you should be able to find this or other brands at your local Asian market or here on Amazon)
pack of spring roll wrappers (we love the small-size ones here on Amazon, but you should be able to find these at any Asian market or large grocery store)
pack of bean thread noodles (here on Amazon, but you should be able to find these at any Asian market or large grocery store)
6-8 sprigs of basil (or a bunch of Thai basil if your Asian market has it). Or, add or substitute fresh mint. Cilantro also works.
fish sauce (3 Crabs Brand on Amazon. Red boat is great, too.)
1 clove peeled garlic
3 limes
your choice of fresh veggies: carrot, cucumber, spring onion, bell pepper, even beet! These need to be cut into thin strips or shredded using a veggie peeler, grater, mandoline, spiralizer, or even a kitchen knife. We’ll take you through the preparation of the veggies in class, so don’t worry about preparing them before class. You’ll need about a heaping cup of veggies, so it’s really not a lot. Choose one or some from the list above.
optional: your choice of chopped peanuts, cashews, or sesame seeds
brown sugar
spices: cayenne, cumin, ground ginger
whiskey
Equipment
10 to 12-inch skillet
a small pot
a kettle full of boiling water
a large mixing bowl and tongs
citrus press
veggie peeler, grater, mandoline, or spiralizer
a cutting board and a kitchen knife
cocktail shaker, pint glass, & strainer, and a jigger or measuring cup with ounces
plenty of ice
