Oh, Brazil! Throw on some Carlos Jobim and Astrid Gilberto and samba with Hipcooks! We’ll transport your kitchen to Brazil as we prepare 2 classic dishes: Caldo de Feijão (Brazilian Black Bean Soup) topped with Vinaigrette (Brazilian Salsa) and Pao de Queijo (Brazilian Cheese Puffs). The Cheese Puffs are made with cassava, so they are gluten-free (but oh-so cheesy and delicious!)
Ingredients for Oh, Brazil!
1 bunch scallions
1 bunch cilantro
4 garlic cloves
2 serrano chilies
1 pound Portuguese linguica or kielbasa (skip for a vegetarian version)
1 pound bacon (skip for a vegetarian version)
1 pound black beans, dried
2 cups grated cheese (parmesan, swiss, or pre-grated Quattro Formaggio from TJs)
3 cups tapioca starch (a 14-ounce pack is perfect)
2 bay leaves
red wine vinegar
staples: 1 cup milk (of any kind), 3 eggs, ¾ cup oil (grapeseed, veggie, or coconut oil), salt
chef’s knife & cutting board
large heavy-bottomed soup pot
sturdy cooking spoon
mini muffin pan
