Celebrate the New Year with Shrimp Dumplings and Homemade Chile Oil. In this class, we’ll prepare both the gyoza and the chile oil. It’s part of a 3-class series we’ve posted so that you can prepare a Dim Sum feast!
Ingredients and Supplies: here’s what you’ll need for Class
3⁄4 inch piece of ginger
2 cloves peeled garlic
1 fresh chile (like red or green jalapeno, serrano, or be bold with a couple of red Thai chilies)
5 scallions
12 ounces shrimp, shelled and deveined
sesame oil
soy sauce
1 small bunch of cilantro
18-20 wonton wrappers (available in most supermarkets)
a scant amount of grapeseed or other neutral oil
3 tablespoons black Chinese vinegar (it’s the best, but you can also use rice vinegar or apple cider vinegar)
If you wish to make fresh chile oil in class with us, here’s what you’ll need (otherwise you store-bought)
grapeseed oil
star anise pods
cinnamon sticks
coriander seeds
whole black peppercorns
bay leaves
cloves
2 garlic cloves
Sichuan pepper flakes (or crushed red pepper flakes)
Supplies
You’ll need a food processor (or you can hustle in class to chop ingredients by hand)
a non-stick skillet
a small to medium pot, mesh strainer, and clean jar with lid (or similar vessel)
Dim Sum and then some

This is Torii Holtgraves. I’ve always wanted to make dumplings, but don’t eat seafood. Do you think I could sub the shrimp for something else and still take the class? Let me know
Hi Torii and thanks for asking! Yes, vegetarians are welcome. Instead of Shrimp, use about 12 ounces of fresh shiitakes. Prior to class, dice the mushrooms. Saute them lightly in a neautral oil. Let them cool for class.
