Start the Green Revolution with these fresh and bright Minted Pea Crostini. Have a sassy snack in seconds with just 6 ingredients. You see, you were smart to keep some peas in your freezer. They’re not just injury-ice anymore!
Ingredients for Sip & Nibble: Keep it Green!
rum: dark or light, spiced or normal: it all works
2-3 juicy limes
a bunch of mint (and some mint tea bags, if you have them)
brown sugar (or agave, or white sugar)
1 package frozen organic peas, defrosted
½ a small red onion
2 cloves garlic
a small block of pecorino, asiago, or parmesan cheese
1 small baguette, sliced and placed on a sheet pan, ready for toasting
cocktail shaker with muddler and strainer
ice, ice baby! (you can be a teacher’s pet and add mint leaves to your ice cube tray, as pictured below)
a food processor or potato masher
preheat your oven to 400°F
