Sip & Nibble: Toast to the Holidays!

The holidays are around the corner. Quick, a cocktail! We can make it though this one, my friends — especially when we all enjoy a Sip & Nibble: Toast to the Holidays! The cocktail is a holiday-spiced rum, gingery and lime number that will get your toes a’tapping, no matter how you feel about holiday music. For nibbling, we’ll make super-cute, super-yummy, Caramelized Onion, Thyme & Goat Cheese Pastries. Make some for now and freeze the rest to pop into the oven whenever your in-laws are at the door.
Ingredients for Toast to the Holidays
4 small or medium-sized onions
vanilla bean paste
small bunch of thyme
1 sheet puff pastry
½ cup goat cheese
spices: star anise pods, allspice berries, cinnamon sticks, cloves
staples: butter, flour, salt, sugar
optional: splash of brandy
There will be a small amount of prep before class, we’ll send you a short list after you sign up for class.
cocktail shaker & strainer (or a mason jar, lid, and mesh strainer)
measuring cup or cocktail jigger with ounces
citrus squeezer or reamer
cutting board & kitchen knife
rolling pin or wine bottle
a small pot
baking sheet (lined with parchment or baking mat) and oven set to 375°F
