Spicy Pumpkin and Black Bean Soup

Cozy on up with Hipcooks this season, we’ve got the perfect thing to get that warm feeling for a weeknight dinner: Spicy Pumpkin and Black Bean Soup. It’s fall flavors in a bowl! This soup is a favorite of adults and kids, since you can spice up your own bowl to your liking.
Get ready for Class. You’ll need:
1 large sugar pumpkin, about 2½ pounds (this will need to be cut and roasted before class, we’ll send instructions beforehand)
3 garlic cloves
at least 2 chilies, like serrano or jalapeno (you can substitute chili powder or cayenne)
white wine (some for you, some for the soup! The soup will need 1 glassful)
a quart of chicken stock
1 14-ounce can diced tomatoes (do not drain)
1 14-ounce can black beans (drained) (If you cook your own black beans, you’ll need about 2 cup’s worth)
raid your spice drawer: cumin, cinnamon, allspice, and nutmeg
(you’ll also need olive oil, salt, and pepper)
