Spring Green Risotto (Class with Kit)

Get a delightful spring in your step with our Spring Green Risotto. In this lively virtual class, we’ll make a risotto large enough to feed the family as a one-dish wonder. This sassy springtime risotto is bright green from peas and mint, and zingy from the lemon. We love this vegetarian risotto as it is, but it’s also nice to add shrimp or scallops. (This class is also gluten-free.)

The purchase price includes the kit, shipping costs, and the cost of the class. (If you cannot attend the live class, we’ll send you a recording to watch at your convenience.)

Ingredients for 4 servings:
arborio rice
fresh seasonal produce: Asparagus, fresh peas, lemon, parsley, and mint
onion
garlic
celery
chicken stock (please let us know if you prefer vegetarian stock)
parmesan cheese
You will need to provide these additional ingredients: butter and olive oil for cooking, white wine (for you and the risotto!) and optional cream (if desired.)
If you would like to add a protein to this risotto, thinly sliced chicken breast, shrimp or scallops make a lovely addition. Plan on about 6-8 ounces or a cup’s worth to add.
There will be some prep to be completed prior to class. The kit will include prep instructions and the Zoom link for class.

Equipment for Class
A heavy-bottomed pot or large skillet to cook your risotto. We recommend our favorite pot, the Le Creuset 4.5 quart soup pot, or a large non-stick skillet.
Sturdy cooking spoon. We recommend the Exoglass spoon: heat-proof, stain-resistant, and very sturdy.
Microplane or grater
