The quinoa in this dish is high in protein, great for vegetarians or a “meatless Monday.” Bust out the chicken stock if you’d like a richer version: all methods are delicious.
Knife Lesson & Zucchini Quinoa Pilaf: Ingredients to have ready (feel free to cut these amounts in half for a family of 1 or 2)
2 cups quinoa
chicken stock or better than bullion, optional
6 garlic cloves
2 handfuls of fresh herbs, like mint and parsley
A large handful pine nuts
