We love this Zucchini Quinoa Pilaf. It is hearty enough to have as a meal, delicious as a side, and best-yet: it is delicious cold. Let the leftovers abound!
Beloved by kids and adults alike, it will become a staple in your repertoire. It’s fast enough for a weekday night dinner, portable to bring as a side dish, packable for a healthy lunch.

The quinoa in this dish is high in protein, great for vegetarians or a “meatless Monday.” Bust out the chicken stock if you’d like a richer version, but all methods are delicious.
Ingredients to have ready
(This will feed a family of four. Feel free to cut these amounts in half for a family of 1 or 2)
2 cups quinoa
chicken stock or better than bullion, optional
6 garlic cloves
2 handfuls of fresh herbs, like mint and parsley
a large handful of pine nuts

a large skillet, small pot and cooking spoons
