SUMMARY:Holy Mole! (Class only)
DESCRIPTION:Elevate your Mexican cooking to the next level with Mole\, an authentic special occasion dish. Some Moles have over 100 ingredients\, with over 10 different kinds of chiles. Our Mole isn’t quite so involved — but does have a substantial list of ingredients and preparation. In class\, we’ll adjust the flavors\, poco a poco\, to make a Mole that sings for you: whether it be mild and nutty\, extra spicy\, or earthy and chocolatey. Serve it with rice and the protein of your choice for a perfect Cinco de Mayo celebration. \n \n\n\n\nHoly Mole Class Kit\nMake the class even more special with the Holy Mole Class Kit. Let us do the heavy lifting and send you the long list of specialty ingredients. The kit includes what you need for class in a lovingly packed box. (All you’ll require is oil and wine for cooking\, and the protein of your choice). In order to receive this perishable ingredient kit by the May 6th class\, you must order your kit by May 1. \nThe purchase price includes the kit\, shipping costs\, and the cost of the class. (If you cannot attend the live class\, we’ll send you a recording to watch at your convenience.) \n \n\n\n\nIngredients you’ll need for the Holy Mole Class\n2 garlic cloves\n2 onions\n4 tomatillos\n2 tomatoes\n2 jalapenos\n5-6 dried Mexican chiles: ancho\, mulato\, pasilla\, cascabel\, etc.\n¼ cup pine nuts\n¼ cup pepitas\n¼ cup almonds\n¼ cup white sesame seeds\n¼ cup raisins\nwhole raw spices: coriander seed\, cumin seed\, star anise\, cinnamon sticks\n1-quart chicken stock\n8 ounces dark chocolate\nolive oil and white wine for cooking\nthe protein of your choice* \nThere will be some prep involved before class — we’ll send you a list after you sign up for class. \n\n*Protein to Provide\nIn this class\, we’ll just make the Mole Sauce. But what to serve with it? Mole is fantastic on roast chicken. You could purchase a small roast bird and pop it in the oven to heat up during class. (Or you could roast a chicken during class — it will be just ready as the class ends!) Mole is also wonderful with fish: another option is to purchase a sturdy white fish (like monkfish\, halibut\, turbot\, etc.)\, and you can gently poach the fish in the mole sauce when we finish the class. Another idea would be to purchase or make enchiladas: nestle them in the Mole Sauce and bake. They’ll be sublime! \nNo matter what protein you choose: we’ll have time in class to guide you through preparing your protein of choice so that it pairs perfectly with your Mole. We’ve got you! \n\nEquipment\nLarge skillet and sturdy cooking spoon\, a Microplane grater\nBlender (you can use a food processor if you do not have a blender.) \n\n \n \nVirtual cooking classes at Hipcooks\nJoin us for this online cooking class on zoom\, or get your own group together for a lively Livestream: Coworkers & clients\, Friends & family\, and kids for a Private virtual cooking class. SUMMARY:Dreams of Sushi (Class only)
DESCRIPTION:Break out the chopsticks and roll out the sushi! In our Hipcooks Dreams of Sushi Class\, you’ll learn to make sushi rice\, how to prepare fish\, and all the tricks to make gorgeous sushi rolls. \n\n \n\n\n\n\n\nSushi Class Kit \n\n\nOur Ingredients Kit makes it easy — just about everything you need for class arrives in a lovingly packed box. \nThe purchase price includes the kit\, shipping costs\, and the cost of the class. (If you cannot attend the live class\, we’ll send you a recording to watch at your convenience.)\n \n\n\n\n \nIngredients you’ll need for Sushi Class\nWe’re listing ingredients to make enough sushi for 4 people\, but feel free to adjust the amounts as necessary. Also\, there are optional ingredients for you to pick and choose from: source the ingredients that you like\, and leave out the rest! The fun thing about creating sushi rolls is that you can make it according to your own tastes. \nThe Staples:\n2 cups Japanese Sushi rice\n1 package Japanese nori sheets (these are the sheets of seaweed used to wrap the sushi)\nseasoned rice vinegar\nsoy sauce\nsesame oil\nwasabi  paste or wasabi powder\ntogarashi (Japanese chili flakes or you can use Sriracha\, chili oil\, or other spices)\npickled ginger \nmayonnaise (or you can use cream cheese instead\, or omit entirely) \nVeggies:\n1 Japanese cucumber (you can also use a Persian or English cucumber)\n1 bunch of scallions\n1 ripe avocado\n(if you have another veggie you’d love to include\, feel free to do so.)  \nFish of your choice:\nIt is important that you chose sushi-grade (or sashimi-grade) fish since it will be consumed raw. When in question\, please ask the Fishmonger for guidance. Most stores will have either fresh or frozen sushi-grade tuna or salmon. Go for about a quarter pound of fish per person — mix and match! Other fish you can consider is sushi-grade yellowtail\, halibut\, or scallops. \nVegetarian option:\nVeggie rolls are\, of course\, delicious! But if you’d like a more substantial filling we would suggest thinly sliced shitake mushrooms. You can sautee them in some neutral oil with a little soy sauce at the top of the class\, and you can use them instead of fish. \n\nEquipment\n1 sushi rolling mat \nplastic wrap\na rice cooker or a good-quality pot with a tight-fitting lid\na Y-shaped veggie peeler\nassorted small bowls (for ingredients\, soy sauce\, etc.) \n \n \nVirtual cooking classes at Hipcooks\nJoin us for this online cooking class on zoom\, or get your own group together for a lively Livestream: Coworkers & clients\, Friends & family\, and kids for a Private virtual cooking class.
