Tomato, White bean & Green Bean Salad
1 box cherry tomatoes
2 cups cooked white beans (like Cannellini or Great Northern)
½ pound haricot verts (or green beans), lightly blanched (keep them crunchy!)
4-6 garlic cloves, minced
1 huge handful basil, sliced into chiffonade
Extra-virgin olive oil, to taste
Maldon salt, to taste
Mix the tomatoes, haricot verts, and beans with plenty of basil. A few twirls of olive oil gives richness, and freshly chopped garlic gives a delightful kick. A sprinkle of Maldon salt and a few turns of the pepper mill finish this fresh and delicious salad.
