Asparagus & Ham Fritatta

Serves 4

1 bunch Asparagus, trimmed and steamed until cooked, but still crunchy
4 Eggs
1 cup Cream
juice of half a Lemon
a few slices of Ham, diced (or use smoked salmon if you prefer!)
a dash of Sea salt and Black pepper
a pat of Butter
a sprinkling of grated Cheese, if desired, like Manchego


Preheat oven to 350°F.

Combine the egg, cream, lemon, and ham in a mixing bowl and whisk together. Add salt and pepper.

In a large saute pan, melt the butter and pour in the egg mixture. Decorate with asparagus, letting them sink in a bit, and sprinkle with cheese. Cook for about a minute over medium heat. Transfer to the oven for about 20-30 minutes or until done. If you’d like the cheese on top to brown, turn on the broiler for the last minute or two of cooking, keeping a close eye on it.
