3/4 pound fresh cranberries
1 cup orange juice
3/4 cup brown sugar
2 teaspoons (about 1 inch) grated fresh ginger – use your microplane!
2 teaspoons orange zest
In a saucepan, combine all ingredients and bring to a boil. Reduce heat and simmer gently for 10 minutes, stirring occasionally. Cranberries will make a delightful popping sound as they open up and mixture will thicken. Taste and adjust for sweetness, orange and ginger!
