When the summer gets hot, the chef’s get grilling. Why turn on the stove when you can have a cold one and cook outside? Plus, the cleanup is a breeze! For dinner, throw together a fresh-from-the-garden salad alongside grilled meat or fish. Top it off with a dessert off the grill, too! Rum-soaked grilled pineapple with ginger ice cream is the perfect ending to a great meal.
Soaking the pineapple in rum before grilling gives it fabulous flavor, plus you’re guaranteed caramelization. The sweetness of the pineapple can use some contrast — spicy dark rum gives it a nice kick in the pants. For oooh’s and aaah’s, serve the pineapple with homemade ginger ice cream.
Ingredients
1 pineapple, peeled and cut into slices
2-3 cups rum
½ cup brown sugar
ginger ice cream, for servingInstructions
Soak the pineapple slices in rum, for a minimum of 3 hours, or overnight if possible.
Any extra "soaking liquid" must be used in a cocktail of your choice — grilling is thirsty work!
After dinner has been served, keep that grill hot. Spread the brown sugar on a plate, and place the pineapple slices on top. Flip each pineapple slice to get a thin coating of brown sugar. This is "extra-beautiful caramelization insurance!"
Grill these beauties. Serve with homemade ice cream or storebought vanilla. Drizzle with leftover rum from the marinade, if didn't get around to making that cocktail. Better than a colada!

Pineapple, rum and the grill! How is that not a home run?! Yum!
I have never tried ginger ice cream. This combination looks refreshing and delicious!
