Elevate your Mexican cooking to the next level with Mole, an authentic special occasion dish. Some Moles have over 100 ingredients, with over 10 different kinds of chiles. Our Mole isn’t quite so involved — but does have a substantial list of ingredients and preparation. In class, we’ll adjust the flavors, poco a poco, to make a Mole that sings for you: whether it be mild and nutty, extra spicy, or earthy and chocolatey. Serve it with rice and the protein of your choice for a perfect Cinco de Mayo celebration (with Hipcooks on Saturday, May 6th).
Holy Mole Class Kit
Make the class even more special with the Holy Mole Class Kit. Let us do the heavy lifting and send you the long list of specialty ingredients. The kit includes what you need for class in a lovingly packed box. (All you’ll require is oil and wine for cooking, and the protein of your choice). In order to receive this perishable ingredient kit by the May 6th class, you must order your kit by May 1.
The purchase price includes the kit, shipping costs, and the cost of the class. (If you cannot attend the live class, we’ll send you a recording to watch at your convenience.)
Ingredients you’ll need for the Holy Mole Class
2 garlic cloves
2 onions
4 tomatillos
2 tomatoes
2 jalapenos
5-6 dried Mexican chiles: ancho, mulato, pasilla, cascabel, etc.
¼ cup pine nuts
¼ cup pepitas
¼ cup almonds
¼ cup white sesame seeds
¼ cup raisins
whole raw spices: coriander seed, cumin seed, star anise, cinnamon sticks
1-quart chicken stock
8 ounces dark chocolate
olive oil and white wine for cooking
the protein of your choice*
There will be some prep involved before class — we’ll send you a list after you sign up for class.
*Protein to Provide
In this class, we’ll just make the Mole Sauce. But what to serve with it? Mole is fantastic on roast chicken. You could purchase a small roast bird and pop it in the oven to heat up during class. (Or you could roast a chicken during class — it will be just ready as the class ends!) Mole is also wonderful with fish: another option is to purchase a sturdy white fish (like monkfish, halibut, turbot, etc.), and you can gently poach the fish in the mole sauce when we finish the class. Another idea would be to purchase or make enchiladas: nestle them in the Mole Sauce and bake. They’ll be sublime!
No matter what protein you choose: we’ll have time in class to guide you through preparing your protein of choice so that it pairs perfectly with your Mole. We’ve got you!
